Fructosyl Amine-Oxygen Oxidoreductase is a highly pure enzyme (specific activity > 3U/mg) that catalyzes the oxidative deglycation of glycated low molecular weight amino acids to produce amino acids, glucosone and hydrogen peroxide (H2O2). This product has been used as a key component in glycated hemoglobin HbA1c assays. It has also been used in a wide array of other biochemical applications.
