This product consists of native, highly pure, Mutarotase (aldose 1-epimerase, EC 5.1.3.3), an isomerase enzyme that catalyzes the interconversion between the alpha and beta anomers of D-glucose. This enzyme accelerates the naturally slow mutarotation process to ensure all glucose forms are available for oxidation by glucose oxidase.
